Ingredients
  

  • 120 g All-Purpose Flour
  • 56 g Almond Flour
  • 45 g Cinnamon or Vanilla Protein Powder See notes below for recommended types of protein
  • 50 g Granulated Sugar Substitute or regular sugar
  • 2 tsp Cinnamon
  • 0.25 tsp Salt
  • 150 ml Milk of Choice exact amount depends on type of protein powder
  • 1 tsp Cinnamon
  • 40 g Granulated Sugar Substitute or regular sugar

Equipment

  • Large Bowl
  • Oven
  • Pizza cutter

Method
 

  1. Prep the dough for the protein cereal by combining all of the dry ingredients in a large bowl.
  2. Add your milk one tablespoon at a time while mixing until it comes together to form a dough.
  3. Refrigerate the dough for 30-60 minutes to allow it to firm up.
  4. Once the dough has chilled, preheat your oven to 350 degrees F.
  5. Separate the dough into two pieces and place each on a sheet of parchment paper.
  6. Sprinkle extra flour over the top of your dough and roll each dough ball out as thinly as possible.
  7. Spray your dough with cooking spray and sprinkle your cinnamon sugar topping over the top.
  8. Cut the dough using a pizza cutter to create small cereal squares.
  9. Bake your cereal at 350 degrees for 16-18 minutes.
  10. Remove the baked cereal from the oven and allow it to cool and firm up for 20-30 minutes.

Notes

This cereal will continue to firm up as it sits; if it's not crunchy enough after baking, let it sit out for 1-2 hours.
