Delicious Red, White & Blue Ice Cream Sandwiches for Summer Fun

Ingredients
  

  • 240 g All-Purpose Flour
  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 227 g Unsalted Butter softened
  • 200 g Granulated Sugar
  • 220 g Brown Sugar packed
  • 2 pieces Large Eggs
  • 10 ml Vanilla Extract
  • 340 g Semi-Sweet Chocolate Chips
  • 960 ml Vanilla Ice Cream or your favorite flavor
  • to taste g Crushed Strawberries optional
  • to taste g Crushed Blueberries optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs, one at a time, and mix well after each addition. Stir in the vanilla extract.
  5. Gradually beat in the dry ingredients until just combined.
  6. Fold in the chocolate chips gently.
  7. Using a cookie scoop or tablespoon, drop dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers still look slightly soft.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to wire racks to cool completely.
  10. Once the cookies are cool, scoop ice cream onto the bottom of one cookie, top with another cookie, and press together.
  11. Wrap each sandwich in plastic wrap and freeze for at least 2 hours before serving.
