  • 15 g Pectin This helps the candies set properly
  • 200 g Sugar For sweetness and texture
  • 15 g Citric Acid For that signature sour flavor
  • 120 g Cornstarch To prevent sticking
  • 200 g Additional Sugar For coating the candies

Method
 

  1. Lightly grease your candy molds with vegetable oil or cooking spray.
  2. In a medium saucepan, combine fruit juice, pectin, and sugar. Stir over medium heat until dissolved, about 3-5 minutes.
  3. Heat the mixture until it boils gently, stirring continuously for 5-7 minutes until it thickens.
  4. Pour the thickened mixture into prepared molds, leaving room for expansion. Let it set for 1 hour.
  5. Remove candies from molds and roll in a mixture of sugar and citric acid for coating.
  6. Place coated candies uncovered in the refrigerator overnight for optimal firmness.

Notes

For best results, use freshly squeezed juice and allow the candies to set overnight for maximum firmness.
