Ingredients
  

  • 240 g grated zucchini liquids squeezed out
  • 240 g cottage cheese drained
  • 2 large eggs
  • 30 g breadcrumbs or almond flour
  • 40 g grated pecorino cheese
  • 2 stalks scallions fine chop
  • 1 tsp Italian herb blend
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. In a large bowl, combine zucchini, cottage cheese, eggs, breadcrumbs, cheese, scallions, herbs, salt, and pepper.
  2. Mix until just combined and form 9 medium patties.
  3. Heat olive oil in skillet over medium heat.
  4. Cook patties for about 4 minutes per side until golden.
  5. Optional: Add fresh lemon juice before serving.

Notes

These fritters are best served warm and can be enjoyed with a dip like tzatziki for added flavor.
