- In a mixing bowl, combine graham cracker crumbs, melted butter, and white sugar until the mixture resembles wet sand. Divide and press into the bottom of mini dessert glasses.
- Beat the softened cream cheese and low-fat vanilla Greek yogurt with an electric mixer until smooth, about 2-3 minutes. In another bowl, whisk sweetened condensed milk and lime juice until well combined. Fold into the cream cheese mixture until smooth.
- Divide the filling mixture in half; to one half, add green food coloring and mix until even.
- Layer the two colored fillings into the glasses, starting with the plain filling, followed by green filling until glasses are filled.
- Chill the desserts in the refrigerator for at least 2 hours until set.
- Top each dessert with whipped cream, lime zest, and crushed graham crackers before serving.
