Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 can great Northern beans drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1 4 oz can green chilies
  • 1/2 onion finely diced
  • 2 cloves garlic minced
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • 1/4 tsp chili powder
  • 1/2 tsp salt
  • 4 oz cream cheese cubed
  • Juice of 1/2 lime

Method
 

  1. Add chicken breasts, beans, broth, chilies, onion, garlic, cumin, oregano, chili powder, and salt to crockpot. Place chicken at bottom.
  2. Cook on LOW 6-8 hours or HIGH 3-4 hours.
  3. Shred chicken with two forks directly in crockpot.
  4. Add cream cheese and lime juice in last 30 minutes. Stir until melted and creamy.
  5. Taste, adjust seasonings, and serve hot with toppings of choice.

Notes

Add cream cheese only in the final 30 minutes to prevent curdling. Frozen chicken requires 1-2 extra hours on LOW. Don’t skip the lime juice for balanced flavor.
