Ingredients
  

  • 240 g cottage cheese
  • 1 large peach sliced (fresh, frozen, or drained canned)
  • 5 g butter optional, for sautéing peaches
  • 1/4 tsp ground cinnamon
  • 2 ml vanilla extract
  • 15 ml maple syrup
  • 30 g granola or chopped nuts such as almonds or pecans
  • 1 pinch nutmeg optional
  • 1 sprig fresh mint optional
  • 1 tbsp Greek yogurt optional for extra creaminess

Method
 

  1. Score an “X” on the bottom of fresh peaches, dunk in boiling water for 30 seconds, transfer to ice water, and slip off the skins (optional).
  2. Drain canned peaches if using.
  3. Slice the peaches.
  4. Heat a skillet over medium heat and sauté sliced peaches with butter and ground cinnamon for about 3 minutes.
  5. Stir in vanilla extract and maple syrup, coating the peaches evenly.
  6. Optionally, blend the cottage cheese for about 30 seconds until smooth.
  7. Spoon the cottage cheese into your serving bowl or jar.
  8. Layer the warm peaches over the cottage cheese.
  9. Sprinkle granola or chopped nuts on top for crunch.
  10. Add a dash of extra cinnamon or a spoonful of Greek yogurt if desired.
  11. Serve immediately or refrigerate for later.
