Ingredients
  

  • 226 g 2% low-fat cottage cheese
  • 90 g Chocolate whey-casein protein powder blend
  • 48 g Super-fine almond flour
  • 20 g Unsweetened Dutch-processed cocoa powder
  • 60 ml Sugar-free maple syrup or liquid monk fruit sweetener
  • 1 tsp pure vanilla extract
  • 0.25 tsp sea salt
  • 45 g Mini semi-sweet chocolate chips

Method
 

  1. Place the cottage cheese, sweetener, and vanilla extract in a high-speed blender or food processor.
  2. Process on high for 60 seconds or until the mixture is completely smooth and no curds remain.
  3. In a large mixing bowl, whisk together the chocolate protein powder, almond flour, cocoa powder, and sea salt until well combined.
  4. Pour the blended cottage cheese mixture into the dry ingredients and stir with a stiff silicone spatula until a thick, cohesive dough forms.
  5. Fold in the mini chocolate chips until evenly distributed through the batter.
  6. Transfer the bowl to the freezer for 15-20 minutes to allow the dough to firm up for easier handling.
  7. Using a tablespoon or small cookie scoop, portion the dough into 16 equal-sized balls (approximately 30g each).
  8. Roll each portion between your palms to smooth the edges and place onto a parchment-lined tray.
  9. Refrigerate the bites for at least 30 minutes to set. A serving consists of 2 bites.
  10. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 30 days.
