Ingredients
  

  • 200 g granulated sugar
  • 220 g brown sugar
  • 227 g unsalted butter softened
  • 4 large eggs at room temperature
  • 5 ml vanilla extract
  • 180 g all-purpose flour
  • 50 g cocoa powder
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 240 g ube halaya
  • 227 g cream cheese softened
  • 60 g powdered sugar

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, cream together the granulated sugar, brown sugar, and butter until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour half of the brownie batter into the prepared baking pan and spread evenly.
  7. In another bowl, mix together the ube halaya, cream cheese, and powdered sugar until smooth.
  8. Spread the ube cream cheese mixture over the brownie layer in the pan.
  9. Spoon the remaining brownie batter on top of the ube layer and spread evenly.
  10. Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean.
  11. Allow to cool before slicing into squares.

Notes

For a richer flavor, serve with a scoop of vanilla ice cream. You can also use fresh ube if available for an even more authentic taste.
