- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a large bowl, cream together the granulated sugar, brown sugar, and butter until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, combine the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour half of the brownie batter into the prepared baking pan and spread evenly.
- In another bowl, mix together the ube halaya, cream cheese, and powdered sugar until smooth.
- Spread the ube cream cheese mixture over the brownie layer in the pan.
- Spoon the remaining brownie batter on top of the ube layer and spread evenly.
- Bake in the preheated oven for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool before slicing into squares.
Notes
For a richer flavor, serve with a scoop of vanilla ice cream. You can also use fresh ube if available for an even more authentic taste.
