Ingredients
  

  • 430 g angel food or yellow cake mix Choose angel food for a lighter, chewier bar or yellow cake mix for a denser, more traditional texture.
  • 425 g lemon pie filling Standard canned lemon pie filling, not lemon curd or fresh lemons.
  • 10 ml nonstick spray or oil Essential for greasing the baking dish to prevent sticking.
  • 20 g powdered sugar Optional, for dusting the cooled bars before serving for an extra touch of sweetness and presentation.

Method
 

  1. In a large mixing bowl, thoroughly blend the angel food or yellow cake mix with the lemon pie filling until the mixture is smooth and evenly incorporated.
  2. Grease a 33 x 23 cm baking dish with nonstick spray or a thin layer of oil.
  3. Transfer the batter to the prepared baking dish and spread evenly.
  4. Bake in a preheated oven at 175°C for 25 to 30 minutes, or until the top is golden and bars are set at the center.
  5. Allow the bars to cool completely in the pan.
  6. Dust with powdered sugar if desired.
  7. Slice into squares before serving.
