Ingredients
  

  • 1 lb ground beef Choose lean ground beef for a healthier option, or a fattier blend for more flavor.
  • 1 packet taco seasoning Use your favorite brand, or make a homemade blend for controlled spice.
  • 0.25 cup water Added to the ground beef with taco seasoning for simmering.
  • 1 head iceberg lettuce Ensure the lettuce is crisp and fresh; rinse and chop just before use.
  • 1 cup Thousand Island dressing Can substitute with ranch, Catalina, or a creamy salsa dressing.
  • 1 cup shredded cheddar cheese Freshly shredding cheese often improves texture and flavor.
  • 1 cup crushed tortilla chips Add right before serving to maintain maximum crunch.
  • 0.5 cup diced tomatoes Roma tomatoes or cherry tomatoes (halved) work well.
  • 0.25 cup sliced black olives Use pitted olives for convenience; drain well before adding.

Method
 

  1. Brown the ground beef in a skillet over medium heat, breaking it up with a spoon. Drain any excess fat. Add the taco seasoning and about 1/4 cup of water, stir well, and simmer for 5 minutes until the liquid has reduced and the beef is flavorful.
  2. In a large mixing bowl, combine the chopped iceberg lettuce, diced tomatoes, and sliced black olives. Toss gently to combine.
  3. Add the seasoned ground beef to the bowl with the vegetables. Drizzle generously with Thousand Island dressing. Toss everything together until evenly coated.
  4. Just before serving, top the salad with shredded cheddar cheese and crushed tortilla chips. Serve immediately to enjoy the crunch.

This salad is perfect for a quick weeknight dinner or a casual potluck. Feel free to customize with other toppings like avocado, corn, or a dollop of sour cream or Greek yogurt.
