Method
- Preheat oven to 350°F (175°C) and position rack in the center. Spray an 8"x4"x3" loaf pan with oil spray.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
- In a large mixing bowl, combine oil, eggs, sugar, vanilla, and pumpkin puree. Mix until smooth.
- Fold in 1 cup of chocolate chips into the wet mixture.
- Add dry ingredients to wet and stir just until combined. Do not overmix.
- Pour batter into the prepared pan and spread evenly. Sprinkle remaining 1/4 cup chocolate chips on top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs.
- Cool in the pan for 10 minutes, then remove to a wire rack to cool completely before slicing.
Notes
Use canned pumpkin puree for best consistency. For added flavor, swap in dark chocolate chips or sprinkle with chopped toasted nuts before baking.
