Ingredients
  

  • 5 –6 large fresh yellow peaches sliced (about 5 cups, or 750–900 grams)
  • 1/4 cup sugar
  • 1 tablespoon cornstarch optional
  • 1/2 cup salted butter melted
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/4 cup turbinado sugar optional
  • Whipped cream or vanilla ice cream for serving

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch pan. Add sliced peaches and 1/4 cup sugar; toss to coat. Add cornstarch if peaches are extra juicy.
  2. In a bowl, mix melted butter, 3/4 cup sugar, vanilla, flour, baking powder, and salt until thick and spreadable.
  3. Spoon topping over peaches and spread gently. Sprinkle with turbinado sugar for extra crunch.
  4. Bake for 30 minutes until bubbling around edges.
  5. Sprinkle more turbinado sugar on top and bake another 10–15 minutes. Optional: broil at 475°F for a golden finish.
  6. Let rest 20–30 minutes before serving. Serve warm with whipped cream or ice cream.

Notes

Use ripe peaches for best results. Swap in nectarines, add cinnamon or nutmeg for spice, or top with toasted nuts. Letting it rest after baking thickens the filling and intensifies flavor.
