- Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish. Cook pasta until just al dente, then drain and reserve 1/2 cup pasta water.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook 1-2 minutes until golden and nutty.
- Gradually whisk in milk and cream. Cook until thick enough to coat a spoon, about 5–7 minutes.
- Remove from heat. Stir in cheddar and Gruyère until smooth and creamy.
- Fold in lobster meat, garlic powder, onion powder, salt, and pepper. Adjust consistency with reserved pasta water if needed.
- Combine pasta with cheese sauce and transfer to baking dish. Sprinkle breadcrumbs evenly over the top.
- Bake for 25–30 minutes until golden brown and bubbling. Let rest 5–10 minutes before serving. Garnish with parsley.
Notes
Tip: Always use freshly grated cheese for the smoothest sauce. Pre-shredded cheese contains additives that prevent melting.
