Ingredients

  • 8 oz elbow macaroni or cavatappi for extra sauce-holding power
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk warmed
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 1 cup cooked lobster meat chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tbsp chopped parsley for garnish

Method

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish. Cook pasta until just al dente, then drain and reserve 1/2 cup pasta water.
  2. In a large saucepan, melt butter over medium heat. Whisk in flour and cook 1-2 minutes until golden and nutty.
  3. Gradually whisk in milk and cream. Cook until thick enough to coat a spoon, about 5–7 minutes.
  4. Remove from heat. Stir in cheddar and Gruyère until smooth and creamy.
  5. Fold in lobster meat, garlic powder, onion powder, salt, and pepper. Adjust consistency with reserved pasta water if needed.
  6. Combine pasta with cheese sauce and transfer to baking dish. Sprinkle breadcrumbs evenly over the top.
  7. Bake for 25–30 minutes until golden brown and bubbling. Let rest 5–10 minutes before serving. Garnish with parsley.

Notes

Tip: Always use freshly grated cheese for the smoothest sauce. Pre-shredded cheese contains additives that prevent melting.
