- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Peel and cube sweet potatoes into 1-inch pieces. Toss with olive oil until coated.
- In a bowl, whisk together melted butter, honey, cinnamon, nutmeg, salt, and pepper.
- Pour glaze over sweet potatoes and toss to coat evenly.
- Spread in a single layer on baking sheet. Avoid overcrowding.
- Roast for 25–30 minutes, tossing at the 15-minute mark, until tender and caramelized.
- Remove from oven, garnish with fresh thyme, and serve warm.
Notes
For best caramelization, use high heat (425°F) and avoid crowding the pan. Prep sweet potatoes and honey butter glaze up to 24 hours ahead and roast fresh for optimal flavor.
