  • 4 cups fresh broccoli florets or frozen, thawed and drained
  • 2 cups shredded sharp cheddar cheese divided
  • 1 can 10.5 oz cream of mushroom soup (or cream of chicken/celery)
  • 1 cup whole milk 2% or heavy cream for richer texture
  • 1 cup seasoned breadcrumbs or crushed Ritz crackers
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick spray.
  2. Bring salted water to a boil and blanch broccoli for 3 minutes. Transfer to an ice bath, drain, and pat dry.
  3. In a large bowl, whisk soup and milk until smooth. Stir in half of the shredded cheddar until slightly melted.
  4. Fold broccoli into the creamy mixture, seasoning with salt and pepper to taste.
  5. Spread evenly in prepared baking dish. Top with remaining cheese and breadcrumbs.
  6. Bake 25–30 minutes until bubbly and golden brown on top. Cool 5 minutes before serving.

Notes
