Ingredients
  

  • 2 tablespoons honey or maple syrup/agave nectar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly crushed black pepper
  • 1 large garlic clove minced
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil

Method
 

  1. In a small bowl, whisk together honey, balsamic vinegar, Dijon mustard, salt, pepper, and garlic.
  2. Slowly drizzle in the olive oil while whisking continuously to create an emulsion.
  3. Whisk vigorously for 2-3 minutes until the dressing is glossy and fully combined.
  4. Taste and adjust seasoning if needed with more salt, pepper, or honey.

Notes

For a vegan version, use maple syrup or agave instead of honey. Store refrigerated in a glass jar for up to 2 weeks. Shake before each use.
