Ingredients
  

  • 8 ounces pasta Use your favorite short pasta shape like rotini, penne, or shells.
  • 1 pound ground beef or turkey Lean ground beef or turkey works best; drain any excess fat after cooking.
  • 1 packet taco seasoning A standard 1-ounce packet of taco seasoning will provide ample flavor.
  • 1 cup cherry tomatoes Halve the tomatoes for easier mixing and eating; grape tomatoes also work.
  • 1 cup corn Canned corn should be drained, frozen corn should be thawed and drained.
  • 1 cup black beans Rinse and drain thoroughly to remove excess sodium and starch.
  • 1 cup shredded cheese Cheddar, Monterey Jack, or a Mexican blend will add a rich, creamy texture.
  • 0.5 cup sour cream Full-fat or light sour cream can be used to create a creamy dressing base.
  • 0.5 cup salsa Choose your preferred level of spice; any store-bought or homemade salsa works.
  • 0.25 cup chopped cilantro Adds a fresh, herbaceous flavor, but can be omitted if you're not a fan.
  • to taste pinch Salt and pepper Season generously after mixing the salad to balance all the flavors.
  • 1 cup crushed Doritos Crush them coarsely for texture; add just before serving to maintain crispness.

Method
 

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain the fat and stir in the taco seasoning.
  3. In a large bowl, combine the cooked pasta, seasoned meat, cherry tomatoes, corn, black beans, shredded cheese, and half of the crushed Doritos.
  4. In a separate bowl, mix the sour cream and salsa, then add to the pasta mixture. Stir until well combined.
  5. Season with salt and pepper to taste.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Just before serving, top with the remaining crushed Doritos and chopped cilantro if desired.

Notes

This pasta salad is perfect for potlucks or meal prep, as it tastes even better the next day. Feel free to customize with your favorite taco toppings!
