Sweet Potato Boats with Ground Turkey and Black Beans

Ingredients
  

  • 2 large sweet potatoes
  • 450 g ground turkey
  • 1 can black beans rinsed and drained
  • 100 g shredded cheese cheddar or your choice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
  • 1 serving Toppings of your choice sour cream, green onions, avocado, etc.

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes until tender.
  3. In a skillet, cook the ground turkey over medium heat, seasoning with chili powder, cumin, salt, and pepper, until completely browned—about 7-10 minutes.
  4. Stir in the black beans and heat through for an additional 2-3 minutes.
  5. Once the sweet potatoes are cooked, slice them in half lengthwise and scoop out a little of the flesh to create a boat.
  6. Fill each sweet potato half with the turkey and black bean mixture and top with shredded cheese.
  7. Return to the oven for another 10 minutes to melt the cheese and bring everything together.
  8. Serve hot, adding your favorite toppings.
