- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, sugar, salt, baking soda, and cinnamon.
- In another bowl, combine oil, eggs, vanilla, and crushed pineapple.
- Pour wet ingredients into dry ingredients and stir until just combined, then fold in walnuts.
- Pour batter into the prepared pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Notes
Serve warm or at room temperature. This bread can be stored in an airtight container for a few days, or frozen for longer storage.
