Method
- Preheat oven to 350°F and prepare a 9×13 baking pan.
- Mix strawberries, rhubarb, granulated sugar, cornstarch, and lemon juice in a bowl and set aside.
- Combine flour, oats, brown sugar, cinnamon, baking powder, and salt in a separate bowl.
- Cut in the butter until the mixture resembles coarse crumbs.
- Press two-thirds of the crumb mixture into the pan to form the crust.
- Spread the fruit filling evenly over the crust.
- Sprinkle remaining crumb mixture on top and bake for 40–45 minutes.
- Let cool completely before slicing into bars.
Notes
These bars can be served warm or cold and are great with a scoop of vanilla ice cream on top.
