Ingredients
  

  • 240 g all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 113 g unsalted butter softened
  • 150 g granulated sugar
  • 50 g brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 lemon Zest of
  • 30 ml lemon juice
  • 150 g fresh strawberries chopped

Method
 

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg, vanilla extract, lemon zest, and lemon juice until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Gently fold in the chopped strawberries.
  7. Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart.
  8. Bake for 10-12 minutes or until lightly golden around the edges; cool on racks before serving.

Notes

These cookies are best enjoyed fresh, but you can store them in an airtight container for a few days. Consider adding a lemon glaze for extra sweetness!
