Method
- Prepare the strawberries by washing and slicing them, reserving some whole for garnish.
- In a blender, combine cottage cheese and half of the sliced strawberries; blend until smooth.
- Add honey and vanilla extract; blend again until well mixed.
- In a separate bowl, whip heavy cream until stiff peaks form.
- Gently fold whipped cream into the strawberry-cottage cheese mixture until combined.
- Spoon into serving cups, garnish with reserved strawberries, and chill in the fridge for at least one hour before serving.
Notes
For a lighter option, you can use low-fat cottage cheese or substitute the heavy cream with a lighter whipped topping.
