- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add egg and vanilla extract and mix until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
- Divide dough in half; add green food coloring to one half and mix until evenly colored.
- Roll out the dough on a floured surface to about ¼-inch thickness.
- Use shamrock or clover-shaped cookie cutters to cut cookies and place them on the prepared baking sheet.
- Bake for 8-10 minutes, until the edges are lightly golden.
- Allow cookies to cool completely on a wire rack.
- Mix powdered sugar with a small amount of milk to create green icing; decorate cookies with icing and sprinkles.
- Let icing set before serving.
