- Preheat the oven to 375°F and spray a 9-inch pie dish with cooking spray to prevent sticking.
- Layer the tortillas in the pan overlapping them, pressing them down to create a crust.
- In a medium bowl, whisk together the eggs, cottage cheese, salt, and pepper until well blended.
- Pour the egg mixture over the tortillas and top with chopped spinach and sliced tomatoes.
- Sprinkle the shredded cheese on top and bake for 25-30 minutes until set and golden brown.
- Allow to cool for at least 15 minutes before slicing and serving.
