Ingredients
  

  • 450 g chicken breast, cut into bite-sized pieces
  • 300 g corn fresh or frozen; if using frozen, thaw first
  • 15 ml olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 1 tsp Salt
  • 1 tsp pepper
  • 120 g Greek yogurt
  • 30 ml lime juice
  • to taste Fresh cilantro, chopped
  • to taste Avocado slices

Method
 

  1. Heat olive oil in a large skillet over medium heat. Season the chicken pieces with chili powder, cumin, salt, and pepper.
  2. Add the chicken to the skillet, cooking until golden brown and fully cooked, about 7-10 minutes. Remove from heat and set aside.
  3. In the same skillet, add the corn and cook for another 5-7 minutes, letting it char slightly for extra flavor.
  4. In a small bowl, whisk together Greek yogurt and lime juice to create a tangy dressing.
  5. Assemble your bowls: layer the chicken and corn, drizzle with the yogurt dressing, and top with fresh cilantro and avocado slices if desired.
