Ingredients
  

  • 340 g boneless, skinless chicken breasts
  • 60 ml lime juice
  • 0.5 tsp chili powder
  • 15 g chipotle pepper in adobo
  • 4 large tortillas
  • 200 g uncooked rice
  • 1 small red bell pepper
  • 120 g corn kernels
  • 240 g black beans
  • 60 g cotija cheese

Method
 

  1. Marinate diced chicken in lime juice, oil, and spices for at least 15 minutes.
  2. Cook rice as per package instructions.
  3. In a skillet, sauté marinated chicken until cooked through (about 12–15 minutes).
  4. Sauté sliced bell pepper and corn for about 8 minutes; add garlic briefly.
  5. Assemble wraps by layering rice, chicken, sautéed veggies, beans, cheese, and drizzle with chipotle crema.
  6. Wrap tightly and serve!
