Method
- Preheat your oven to 350°F and line two large baking sheets with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until combined.
- In a large mixing bowl, cream together softened butter, 1 cup plus 2 tablespoons of granulated sugar, and light brown sugar until light and fluffy.
- Add the egg, vanilla extract, lemon zest, and 3 tablespoons of lemon juice. Mix until smooth.
- Gradually mix in the dry ingredients until a soft, cohesive dough forms. Avoid overmixing.
- Scoop dough into 1½-tablespoon portions and roll into balls. Roll each ball in the granulated sugar.
- Place the sugared dough balls on prepared baking sheets, spacing them about 2 inches apart.
- Bake for 7 to 10 minutes until edges are set but centers are soft. Do not overbake.
- Let cookies cool on the pan for 4 to 5 minutes before transferring to a wire rack.
Notes
For a stronger lemon flavor, feel free to add more lemon juice. Store cookies in an airtight container for freshness.
