Ingredients
  

  • 360 g all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 226 g unsalted butter softened to room temperature
  • 250 g granulated sugar plus ¼ cup for rolling
  • 28 g light brown sugar
  • 1 large egg at room temperature
  • 0.5 tsp vanilla extract
  • 2 tbsp lemon zest
  • 45 ml freshly squeezed lemon juice 3 to 4 tablespoons

Method
 

  1. Preheat your oven to 350°F and line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt until combined.
  3. In a large mixing bowl, cream together softened butter, 1 cup plus 2 tablespoons of granulated sugar, and light brown sugar until light and fluffy.
  4. Add the egg, vanilla extract, lemon zest, and 3 tablespoons of lemon juice. Mix until smooth.
  5. Gradually mix in the dry ingredients until a soft, cohesive dough forms. Avoid overmixing.
  6. Scoop dough into 1½-tablespoon portions and roll into balls. Roll each ball in the granulated sugar.
  7. Place the sugared dough balls on prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 7 to 10 minutes until edges are set but centers are soft. Do not overbake.
  9. Let cookies cool on the pan for 4 to 5 minutes before transferring to a wire rack.

Notes

For a stronger lemon flavor, feel free to add more lemon juice. Store cookies in an airtight container for freshness.
