Ingredients
  

  • 1.5 lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp grated fresh ginger
  • 2 cloves garlic minced
  • 1/2 tsp red pepper flakes
  • 1 cup fresh pineapple diced
  • 1/2 red bell pepper diced
  • 1/4 red onion finely diced
  • 1/4 cup chopped cilantro
  • 1 jalapeño minced
  • 2 tbsp lime juice
  • 1/4 tsp salt
  • 12 small corn or flour tortillas
  • 1 tbsp olive oil
  • 1/2 cup shredded cabbage or slaw mix

Method
 

  1. Whisk soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes together.
  2. Add chicken and toss to coat evenly.
  3. Cover and marinate for at least 30 minutes.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Drain marinade and cook chicken for 5 to 7 minutes until golden and cooked through.
  6. In a bowl, mix pineapple, bell pepper, onion, cilantro, jalapeño, lime juice, and salt.
  7. Warm tortillas until soft and pliable.
  8. Layer cabbage, chicken, and pineapple salsa onto tortillas.
  9. Serve immediately with optional toppings.

Notes

Cook chicken in batches to avoid overcrowding and always warm tortillas to prevent cracking.
