Ingredients
  

  • 2 large oranges zested and juiced
  • 2 cups granulated sugar
  • 1/4 cup corn syrup
  • 1/2 cup water
  • 1 tablespoon butter
  • 1 packet unflavored gelatin
  • 1 teaspoon orange extract optional
  • Powdered sugar for dusting optional
  • Pinch of salt optional

Method
 

  1. Zest and juice the oranges, reserving both zest and approximately 1/2 cup of juice.
  2. Combine orange juice, water, sugar, and corn syrup in a saucepan and heat until sugar dissolves.
  3. Simmer without stirring for 10 minutes.
  4. Bloom gelatin in 2 tablespoons cold water for 5 minutes.
  5. Remove syrup from heat and stir in bloomed gelatin.
  6. Return to low heat and add butter, zest, orange extract, and salt; stir for 5 minutes.
  7. Cool mixture for 1–2 hours until lukewarm.
  8. Pour into a greased 8×8-inch dish or silicone molds.
  9. Refrigerate 4–6 hours until fully set.
  10. Cut into squares and dust with powdered sugar.

Notes

Do not stir during simmering to avoid crystallization, always bloom gelatin properly, and allow the mixture to cool before pouring for even setting.
