Method
- In a large pot over medium-high heat, cook Italian sausage and diced onion until sausage is browned and onion is soft.
- Drain excess grease from the pot.
- Stir in Italian seasoning, garlic powder, and chopped carrot.
- Cook for 2 minutes, stirring to bloom the spices.
- Add broth, diced tomatoes, cannellini beans, tomato paste, and bay leaf.
- Bring soup to a boil, then reduce heat to low.
- Simmer uncovered for 15 minutes, until carrots are tender.
- Remove and discard bay leaf.
- Ladle soup into bowls and garnish with Parmesan cheese and parsley.
- Serve hot.
Notes
For a lighter version, use turkey sausage and low-sodium broth. Red pepper flakes can be added for extra heat.
