Method
- Line a baking sheet with parchment paper or prepare lollipop molds.
- In a heavy-bottom saucepan, combine the honey, lemon juice, and lemon zest.
- Heat over medium heat until the mixture reaches 300°F, stirring only at the beginning.
- Carefully spoon the hot mixture into molds or drop small circles onto parchment paper.
- Insert lollipop sticks immediately.
- Allow the lollipops to cool at room temperature for 25–30 minutes until fully hardened.
- Remove from molds and store properly.
Notes
Use a candy thermometer for best results and store lollipops in an airtight container to prevent moisture absorption.
