Ingredients
  

  • 1 cup raw honey
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest

  1. Line a baking sheet with parchment paper or prepare lollipop molds.
  2. In a heavy-bottom saucepan, combine the honey, lemon juice, and lemon zest.
  3. Heat over medium heat until the mixture reaches 300°F, stirring only at the beginning.
  4. Carefully spoon the hot mixture into molds or drop small circles onto parchment paper.
  5. Insert lollipop sticks immediately.
  6. Allow the lollipops to cool at room temperature for 25–30 minutes until fully hardened.
  7. Remove from molds and store properly.

Use a candy thermometer for best results and store lollipops in an airtight container to prevent moisture absorption.
