Ingredients
  

  • lbs steak ribeye, sirloin, or filet mignon, cut into 1-inch cubes
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • ½ tsp red pepper flakes optional
  • 4 tbsp unsalted butter
  • 6 garlic cloves minced
  • 1 medium shallot finely diced
  • ¼ cup fresh chopped parsley

Method
 

  1. Cut steak into 1-inch cubes and pat dry thoroughly. Season with salt, pepper, and red pepper flakes.
  2. Heat a large skillet with 1 tbsp oil over high heat. Sear steak in a single layer for 1–2 minutes per side until browned. Cook in batches if needed. Transfer to a plate.
  3. Reduce heat to medium-low. Add butter, garlic, and shallot. Sauté 1 minute until fragrant, stirring constantly.
  4. Return steak bites to the pan and toss in garlic butter for 1–2 minutes to warm through.
  5. Remove from heat and finish with fresh parsley before serving.

Notes

For extra flavor, add 1 teaspoon Worcestershire sauce when returning steak to the pan.
