Simple Date Caramels for Guilt Recipe

Ingredients
  

  • 1 cup Medjool dates pitted
  • 2 tablespoons almond butter or sunflower seed butter
  • 1 tablespoon coconut oil melted
  • 1 cup dark chocolate chips optional
  • 2 teaspoons coconut oil for chocolate coating
  • Flaky sea salt optional

Method
 

  1. Soak pitted Medjool dates in very hot water for 10–15 minutes until soft.
  2. Drain dates thoroughly to prevent excess moisture.
  3. Add dates, almond butter, and melted coconut oil to a blender or food processor.
  4. Blend until smooth and creamy, scraping down sides as needed.
  5. Line a 9×5-inch loaf pan with parchment paper.
  6. Spread the blended mixture evenly into the pan.
  7. Freeze for 2–3 hours until firm.
  8. Remove and cut into 12 squares.
  9. Melt chocolate with 2 teaspoons coconut oil in the microwave if coating.
  10. Dip each caramel square halfway into chocolate and place on parchment.
  11. Sprinkle with flaky sea salt if desired.

Notes

For best results, ensure dates are fully softened before blending. If mixture is too thick, add a tiny splash of soaking water.
