For the Grits
  • 1 cup stone-ground grits
  • 4 cups low-sodium chicken broth
  • 4 tablespoons unsalted butter
  • ½ cup heavy cream
  • 1 cup sharp cheddar cheese optional
  • Kosher salt and white pepper to taste
For the Shrimp
  • 1 lb large shrimp peeled and deveined
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1 teaspoon Cajun seasoning
  • Juice of 1 lemon
  • Salt and black pepper to taste
  • 2 green onions sliced (for garnish)

Method
 

  1. Bring chicken broth to a boil in a saucepan. Slowly whisk in grits.
  2. Reduce heat and simmer grits for 20–25 minutes, stirring occasionally.
  3. Stir in butter, cream, and cheese (if using). Season with salt and white pepper.
  4. Heat butter in a skillet over medium-high heat. Add garlic and cook briefly.
  5. Add shrimp and Cajun seasoning. Cook 3–5 minutes until pink and opaque.
  6. Squeeze lemon juice into the pan and stir gently.
  7. Spoon creamy grits into bowls and top with shrimp.
  8. Garnish with green onions and serve immediately.

Notes

Stone-ground grits provide the best texture and flavor. Avoid overcooking shrimp to keep them tender.
