  • 4 tablespoons unsalted butter

Method
 

  1. Prepare an 8-inch square pan by greasing it with butter or lining with parchment.
  2. Combine sugar and cocoa powder in a saucepan, then stir in whole milk until smooth.
  3. Cook over medium-high heat, stirring until mixture reaches a boil.
  4. Reduce heat and simmer without stirring until mixture reaches 238°F (soft-ball stage).
  5. Remove from heat and cool undisturbed to 110°F.
  6. Add butter and vanilla, then beat until mixture thickens and loses its gloss.
  7. Pour fudge into prepared pan, smooth the top, and allow to set for 2–3 hours.
  8. Cut into squares once fully firm.
