Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 can 20 oz pineapple slices, drained
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Chopped green onions
  • Sesame seeds

Method

  1. Preheat oven to 375°F (190°C). Pat chicken dry.
  2. Season chicken with garlic powder, onion powder, salt, and pepper.
  3. Heat oil in an oven-safe skillet over medium-high heat and sear chicken 3–4 minutes per side.
  4. Mix pineapple juice, brown sugar, and soy sauce until dissolved. Pour over chicken and add pineapple slices.
  5. Bake 25–30 minutes until internal temperature reaches 165°F.
  6. Remove chicken and pineapple. Whisk cornstarch and water, then stir into skillet juices over medium heat until thickened.
  7. Return sauce to chicken before serving. Garnish with green onions and sesame seeds.

Notes

Avoid marinating chicken in pineapple juice for more than 4 hours to prevent mushy texture.
