Cookies
  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon fine salt
  • ¾ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ teaspoon almond extract optional
Royal Icing
  • 3 cups powdered sugar sifted
  • 2 tablespoons meringue powder
  • 4 –6 tablespoons warm water
  • ½ teaspoon vanilla extract optional
  • Gel food coloring pastels
  • Edible pearls or sprinkles optional

Method
 

  1. Whisk flour, baking powder, and salt in a bowl.
  2. Cream butter and sugar until light and fluffy.
  3. Beat in egg, vanilla, and almond extract.
  4. Gradually mix in dry ingredients until a soft dough forms.
  5. Divide dough into discs, wrap, and chill for 1 hour.
  6. Preheat oven to 350°F (180°C) and line baking sheets.
  7. Roll dough to ¼-inch thickness and cut into shapes.
  8. Bake for 8–10 minutes until edges are set.
  9. Cool completely before decorating.
  10. Prepare royal icing and decorate cookies as desired.
  11. Allow icing to dry fully before storing.

Notes

For best results, chill dough thoroughly and allow icing to dry overnight. Avoid decorating warm cookies to prevent icing melt.
