- In a large bowl, beat cream cheese with a mixer until smooth.
- Add mayonnaise and pineapple juice and continue to mix until combined.
- Add the pineapple bits, marshmallows, and grapes (both red and green) and fold gently into the mixture.
- Fold in the cool whip until fully incorporated.
- Pour the mixture into a 7x11 or 8x10 casserole dish and smooth with a spatula, pressing lightly into all corners and across the top.
- Cover with plastic wrap or foil and place in the freezer. Freeze for at least 2 hours before serving.
- Before serving, remove from the freezer and let sit at room temperature for 10-15 minutes. Use a sharp knife to cut into equal squares.
- Garnish with your choice of pecan pieces, sliced grapes, marshmallows, and pineapple tidbits.
Notes
For best results, allow the salad to freeze completely. It makes a wonderful light dessert or refreshing side dish for a summer meal. You can also experiment with other fruits like mandarin oranges or berries.
