Ingredients
  

  • 1 package cream cheese Ensure it's at room temperature (8 oz.) for smooth beating.
  • 2 tablespoons mayonnaise Adds a creamy tang and helps with texture.
  • 2 tablespoons pineapple juice Use the juice drained from the canned pineapple tidbits for best flavor.
  • 1 can pineapple tidbits Make sure to drain well before adding to the mixture.
  • 2 cups mini marshmallows Adds sweetness and a soft, chewy texture to the salad.
  • 1 cup fresh seedless green grapes Halve the grapes for easier eating and better distribution.
  • 1 cup fresh seedless purple grapes Halve the grapes for easier eating and better distribution, adds vibrant color.
  • 1 cup cool whip Fold in gently to maintain its airy texture and lightness.
  • 0.25 cup pecan pieces For garnish, provides a nice crunchy contrast.
  • 0.25 cup sliced grapes For garnish, adds freshness and visual appeal.
  • 0.25 cup mini marshmallows For garnish, a sweet and soft topping.
  • 0.25 cup pineapple tidbits For garnish, adds more fruity flavor and texture.

Method
 

  1. In a large bowl, beat cream cheese with a mixer until smooth.
  2. Add mayonnaise and pineapple juice and continue to mix until combined.
  3. Add the pineapple bits, marshmallows, and grapes (both red and green) and fold gently into the mixture.
  4. Fold in the cool whip until fully incorporated.
  5. Pour the mixture into a 7x11 or 8x10 casserole dish and smooth with a spatula, pressing lightly into all corners and across the top.
  6. Cover with plastic wrap or foil and place in the freezer. Freeze for at least 2 hours before serving.
  7. Before serving, remove from the freezer and let sit at room temperature for 10-15 minutes. Use a sharp knife to cut into equal squares.
  8. Garnish with your choice of pecan pieces, sliced grapes, marshmallows, and pineapple tidbits.

Notes

For best results, allow the salad to freeze completely. It makes a wonderful light dessert or refreshing side dish for a summer meal. You can also experiment with other fruits like mandarin oranges or berries.
