- Cook the pasta: Bring a big pot of salted water to a boil. Drop in the lasagna noodles and cook them just until al dente. Drain and lay them flat on parchment paper or a lightly oiled surface so they don’t stick together.
- Make the filling: In a mixing bowl, stir together the shrimp, crab meat, ricotta cheese, garlic, and half of the Alfredo sauce. Season generously with salt and pepper.
- Assemble the roll-ups: Spread a thin layer of Alfredo sauce on the bottom of your baking dish. Place a spoonful of filling across the width of a lasagna noodle, roll it up snugly, and set it seam-side down in the dish. Repeat with all the noodles.
- Add cheese and sauce: Pour the remaining Alfredo sauce evenly over the roll-ups. Sprinkle mozzarella and Parmesan cheese across the top.
- Bake: Preheat your oven to 375°F (190°C). Cover the dish with foil and bake for 20 minutes. Remove the foil and continue baking for about 10 minutes, until the cheese is golden and bubbling.
- Finish & serve: Let the roll-ups rest for 5 minutes before serving. Garnish with parsley and enjoy your creamy, seafood-packed dinner.
