  • Mayonnaise – 1/2 cup
  • Cheddar cheese – 1 cup shredded (low-fat option can be used)
  • Breadcrumbs – 1/2 cup whole-grain breadcrumbs for a healthier twist

  • Fresh parsley – 2 tablespoons chopped
  • Butter – 1 tablespoon can be substituted with olive oil for a heart-healthy version
  • Garlic – 2 cloves minced
  • Green peas – 1/2 cup optional
  • Mushrooms – 1/2 cup sliced (optional)
  • Red bell peppers – 1 diced (optional)
  •
  • Paprika – 1/2 teaspoon optional

Method

  1. Preheat the oven to 350°F (175°C) and grease your baking dish with butter or cooking spray.
  2. Prepare the seafood: If using frozen seafood, ensure it’s thawed and well-drained. Chop into bite-sized pieces.
  3. Prepare the creamy sauce: In a mixing bowl, combine the cream of mushroom soup, mayonnaise, lemon juice, and minced garlic. Stir until smooth. Add any optional ingredients like green peas or mushrooms for added flavor and texture.
  4. Add seafood and cheese: Gently fold the chopped seafood and shredded cheddar cheese into the creamy mixture.
  5. Assemble the casserole: Transfer the mixture into the prepared baking dish, smoothing the top with a spatula. Sprinkle the breadcrumbs evenly on top.
  6. Bake: Place the casserole in the oven and bake for 30-35 minutes or until the top is golden and the casserole is bubbling.
  7.
  8. Garnish: Once baked, remove the casserole from the oven and let it cool for a few minutes before garnishing with fresh parsley.

Notes

  • You can use a variety of seafood based on personal preference, including lobster or fish fillets.
  • If you prefer a spicier casserole, consider adding a pinch of cayenne pepper or chili flakes.
  • For a dairy-free version, use plant-based mayonnaise and vegan cheese.
