Method
 

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the butter in a small saucepan over medium heat. Cook while stirring until the butter foams and turns golden brown with a nutty aroma, about 3–4 minutes.
  3. Add the minced garlic and honey to the brown butter, stirring for about 30 seconds until fragrant. Remove from heat.
  4. Place the carrots on the prepared baking sheet and drizzle with olive oil, salt, and pepper. Toss to coat evenly.
  5. Pour the brown butter honey garlic mixture over the carrots and toss until well coated.
  6. Spread the carrots in a single layer and roast for 20–25 minutes, stirring once halfway through, until tender and caramelized.
  7. Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Notes

This recipe is incredibly versatile; feel free to add a pinch of chili flakes for a touch of heat or a squeeze of lemon juice at the end for brightness. It pairs wonderfully with roasted chicken or a holiday meal.
