- In a large bowl, add diced pineapple, thinly sliced cucumber, and finely sliced red onion. Stir gently to mix.
- In a small bowl, whisk together chili powder, lime juice, honey (or maple syrup), and salt until smooth and well-blended.
- Pour the dressing over the fruit and vegetable mixture. Gently toss everything together.
- Allow the salad to sit for 10–15 minutes to let the flavors meld.
- Just before serving, sprinkle chopped fresh cilantro or mint on top.
Notes
This salad is best served chilled. For an extra kick, consider adding a dash of hot sauce to the dressing. It makes a fantastic light lunch or a vibrant side dish for grilled chicken or fish.
