  • 2 item ripe mangoes peeled, pitted, and thinly sliced for easy mixing
  • 1 item small red onion thinly sliced for delicate flavor and texture

  • 1 item red bell pepper thinly sliced to add color and sweet flavor
  • 1 cup cherry tomatoes halved to release their juices and integrate better

Lime Dressing
  • 3 tbsp fresh lime juice freshly squeezed for best zesty flavor
  • 2 tbsp honey adjust to your preferred level of sweetness
  • 1 tbsp olive oil a good quality extra virgin olive oil works best
  • 1/2 tsp salt to enhance all the flavors in the dressing
  • 1/4 tsp black pepper freshly ground for better aroma and taste

Method
 

  1. Peel the mangoes and cut them into thin slices. Thinly slice the red onion, cucumber, and red bell pepper. Halve the cherry tomatoes. Set all the prepared ingredients aside.
  2. In a small bowl, whisk together the fresh lime juice, honey, olive oil, salt, and black pepper until well combined and smooth.
  3. In a large salad bowl, combine the sliced mango, red onion, cucumber, red bell pepper, and cherry tomatoes. Add the chopped cilantro and mint leaves.
  4. Pour the lime dressing over the salad mixture. Gently toss all the ingredients together until they are well coated with the dressing.
  5. Allow the salad to chill in the refrigerator for at least 15 minutes before serving. This helps the flavors to meld together.
  6. Serve the salad chilled as a refreshing side dish or a light main course.

Notes

Feel free to add grilled chicken, shrimp, or tofu for a more substantial meal. This salad is best enjoyed fresh within a day.
