- In a medium bowl, dissolve the orange gelatin mix in 1 cup of boiling water. Stir until completely dissolved.
- Add 1 cup of cold water to the gelatin mixture and stir well. Set aside to cool slightly.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Gradually add the powdered sugar, mixing until well combined and creamy.
- Gently fold in the whipped topping into the cream cheese mixture until fully incorporated.
- Slowly pour the cooled gelatin mixture into the cream cheese mixture, folding until well combined.
- Carefully fold in the mini marshmallows, mandarin oranges, and shredded coconut (if using) until evenly distributed.
- Transfer the mixture to a serving bowl or individual dessert cups. Cover and refrigerate for at least 2 hours or until set.
- Before serving, top with additional whipped topping and garnish with orange slices or zest for a fresh touch.
Notes
For an extra burst of flavor, consider adding a splash of orange juice to the mixture before chilling.
