Ingredients
  

  • 6 tablespoons unsalted butter divided
  • 4 cups cooked potatoes diced (russet or Yukon gold)
  • 1 small sweet onion diced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 cups cooked corned beef chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat a large skillet over medium heat and melt 4 tablespoons of butter.
  2. Add diced potatoes, onion, salt, and pepper. Cook 8–10 minutes until lightly browned.
  3. Stir in corned beef, garlic powder, and onion powder.
  4. Press mixture flat and cook 3–5 minutes until a crispy crust forms.
  5. Flip sections, add remaining butter, and repeat crisping 2–3 times.
  6. Remove from heat, garnish with parsley, and serve hot.

Notes

For extra crispiness, use a cast-iron skillet and avoid stirring too often. Serve with fried eggs for a classic breakfast.
