Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup fresh strawberries finely chopped and patted dry
  • cups crushed vanilla wafers
  • 12 –16 oz white chocolate
  • Optional: ½ teaspoon vanilla extract
  • Optional: pinch of salt
  • Optional garnish: freeze-dried strawberries or wafer crumbs

Method
 

  1. Crush vanilla wafers into fine crumbs using a food processor.
  2. Beat softened cream cheese until smooth and fluffy.
  3. Mix in chopped strawberries and wafer crumbs until combined.
  4. Scoop and roll into balls, then place on a lined baking sheet.
  5. Chill for 15 minutes.
  6. Melt white chocolate in short microwave bursts, stirring until smooth.
  7. Dip each truffle into melted chocolate and coat evenly.
  8. Place back on parchment and add toppings if desired.
  9. Chill for 30 minutes until set.

Notes

Pat strawberries completely dry to avoid a soft filling. Use high-quality white chocolate for smooth coating. Chill before dipping for best results.
