Method
- Crush vanilla wafers into fine crumbs using a food processor.
- Beat softened cream cheese until smooth and fluffy.
- Mix in chopped strawberries and wafer crumbs until combined.
- Scoop and roll into balls, then place on a lined baking sheet.
- Chill for 15 minutes.
- Melt white chocolate in short microwave bursts, stirring until smooth.
- Dip each truffle into melted chocolate and coat evenly.
- Place back on parchment and add toppings if desired.
- Chill for 30 minutes until set.
Notes
Pat strawberries completely dry to avoid a soft filling. Use high-quality white chocolate for smooth coating. Chill before dipping for best results.
