Method
- Whisk flour, salt, and sugar together in a large bowl.
- Add olive oil and warm water and mix until a shaggy dough forms.
- Knead dough on a floured surface for 8 to 10 minutes until smooth and elastic.
- Cover dough and let rest for 30 to 45 minutes.
- Divide dough into 8 to 10 equal pieces.
- Roll each piece into very thin circles or ovals.
- Heat a dry skillet over medium-high heat.
- Cook lavash 1 to 2 minutes per side until bubbles and golden spots appear.
- Stack cooked lavash under a towel to keep soft.
Notes
Roll dough very thin and allow proper resting time to achieve soft, flexible lavash.
