Ingredients
  

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tbsp olive oil
  • 1 cup warm water
  • 1 tsp sesame seeds optional

Method
 

  1. Whisk flour, salt, and sugar together in a large bowl.
  2. Add olive oil and warm water and mix until a shaggy dough forms.
  3. Knead dough on a floured surface for 8 to 10 minutes until smooth and elastic.
  4. Cover dough and let rest for 30 to 45 minutes.
  5. Divide dough into 8 to 10 equal pieces.
  6. Roll each piece into very thin circles or ovals.
  7. Heat a dry skillet over medium-high heat.
  8. Cook lavash 1 to 2 minutes per side until bubbles and golden spots appear.
  9. Stack cooked lavash under a towel to keep soft.

Notes

Roll dough very thin and allow proper resting time to achieve soft, flexible lavash.
