Ingredients
  

  • 4 pieces large whole wheat tortillas
  • 1 medium cucumber thinly sliced
  • 240 g tomatoes diced, use heirloom or Roma for flavor
  • 1 piece red bell pepper sliced
  • 75 g feta cheese crumbled
  • 30 ml olive oil for drizzling
  • 15 ml lemon juice for brightness
  • 15 g fresh parsley chopped
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

  1. Gather all your ingredients – tortillas, veggies, and feta cheese.
  2. Thinly slice the cucumbers and red bell pepper. Dice the tomatoes.
  3. In a medium bowl, combine cucumbers, tomatoes, red bell pepper, and crumbled feta cheese. Drizzle with olive oil and lemon juice.
  4. Sprinkle salt and freshly ground black pepper to taste.
  5. Lay a tortilla on a flat surface. Spoon the veggie mixture onto the center, fold in the sides, and roll tightly from the bottom up.
  6. Wrap in plastic wrap and let them sit in the fridge for about 10 minutes.
  7. Cut the wraps in half diagonally and serve on a platter.

Notes

These wraps can be made ahead of time and stored in the fridge. Feel free to customize with your favorite veggies or proteins.
