  • 170 g Chicken Breast sliced thin; leftover rotisserie chicken is a fantastic shortcut
  • 15 g Taco Seasoning adjust to your taste; a homemade blend is divine
  • 75 g Corn Kernels fresh or frozen; charring adds smoky sweetness
  • 1 dollop Guacamole homemade is special, but good quality store-bought works
  • 100 g Lettuce chopped; provides a refreshing base
  • 100 g Shredded Cheese Cotija, feta, or Mexican blend
  • 60 g Plain Greek Yogurt use 0% or 2% fat for lighter touch
  • 1 handful Fresh Cilantro chopped; optional garnish for flavor
  • 2 wedges Lime for squeezing over everything

Method
 

  1. Season the sliced chicken generously with taco seasoning. Reheat in a skillet over medium-high heat for 2-3 minutes until warmed through and slightly caramelized.
  2. Heat a dry skillet over medium-high heat. Add the corn kernels and cook for 3-4 minutes without stirring, then toss and cook until beautifully charred.
  3. In your serving bowls, create a refreshing bed by layering the chopped lettuce. This acts as a perfect foundation.
  4. Artfully arrange the warm, seasoned chicken and charred corn over the lettuce. Add delightful dollops of guacamole and a sprinkle of shredded cheese.
  5. Finish with a cool, tangy drizzle of plain Greek yogurt. Thin it with lime juice first if desired. Garnish with fresh cilantro and serve with a lime wedge.
